Who doesn’t love cupcakes! A quick and easy basic cupcake recipe that’s perfect for birthday parties, afternoon tea or just because. The recipe can be used to make a cake or pour the mixture into muffin tins to make cupcakes. Easy enough for the kids to help out too!

Here's a quick and easy basic cupcake recipe that’s perfect for kids parties, afternoon tea or just because.

Use the recipe to make chocolate cupcakes or vanilla cupcakes.

You can also use it to make a cake or pour the mixture into muffin tins to make cupcakes. Easy enough for the kids to help out too!


Vanilla & chocolate cupcakes recipe


To make your vanilla or chocolate cupcakes you will need:
 

Dry Ingredients

 
  • 1 1/2 cups sugar
  • 2 cups flour
  • 1/2 cup cocoa (if making chocolate cakes)
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp baking soda
 

Wet Ingredients

 
  • 2 eggs
  • 1/2 cup oil
  • 1 tsp malt vinegar
  • 2 tsp vanilla essence
  • 1 cup milk
  • 1 cup cold coffee (or just 1 cup of water if you prefer not to use coffee)
 

How to make the cupcakes


1. Sift dry ingredients into a bowl.

2. Mix wet ingredients in a separate bowl.

3. Pour wet mixture into the dry mixture and mix well.

4. Put cupcake cases into a muffin tray and pour the mixture into the cupcake cases. Alternatively you can add the mixture to a greased cake tin.

5. Bake at 180 degrees for 40-60 minutes.

6. Remove the cakes from oven and leave to cool.

7. Leave the cupcakes plain or add your own decorations or icing to the top.
 

Suggestions for your cupcakes

 
  • This recipe can be made gluten free by using any type of gluten free flour and replacing the malt vinegar with a gluten free vinegar such as white vinegar.
 
  • You can make this recipe dairy free by substituting the milk for rice milk or another dairy free milk alternative.
 
  • You can also use this recipe to make plain cupcakes by leaving out the cocoa and adding a little more vanilla essence. If making plain cupcakes, try substituting the vanilla essence for banana essence.
