Fancy eggs on toast!

Ingredients

• Firm red capsicum (you can also use green, yellow or orange capsicums if you prefer
• Eggs
• Oil for frying
• Bread, bagels etc for toasting

Instructions 

• Slice the capsicum into circles approx 50mm deep. Carefully remove any seeds.
• Gently heat the oil in a frying pan.
• Add a slice of the capsicum to the pan.
• Crack an egg into the capsicum circle.
• Fry gently until the capsicum has softened and the egg is cooked the way you like it.
• Repeat as necessary.
• Serve on your favourite toasted bread, bagels etc.
