Have a go at this recipe for mini Christmas mince pies.

They’re super easy to make (even for non-bakers!) and their mini size is just right for young kids too.


Ingredients

 
  • Spray oil or butter for greasing the muffin trays
  • Packet of Edmonds Sweet Short Pastry
  • Jar fruit mince
  • Icing sugar for dusting
  • Small muffin trays
  • Circle pastry cutter to fit muffin trays
  • Small star pastry cutter


To Make


1. Turn the oven on to 190 degrees Fan Bake to heat up (or your usual setting for small pastries).

2. Lightly spray the muffin trays with the spray oil or lightly grease with the butter.

3. Cut out an equal number of circles and stars from the pastry sheets using the pastry cutters.

4. Put the pastry circles into the sprayed muffin trays.

5. Fill each one with a teaspoonful of fruit mince.

6. Put the pastry stars on top of the fruit mince.

7. Bake for approx 12 - 15 mins until lightly golden.

8. Leave the mince pies in the muffin trays to cool for approx 5-10 mins then turn out onto a rack to cool completely.

9. Dust lightly with the icing sugar.
 

Tips

 
  • Any brand of fruit mince will work, but we use Tasti Old English Fruit Mince.
 
  • The number of mince pies you make will vary according to the number and size of the shapes you cut out and the number of pastry sheets you use.
