This ANZAC biscuits recipe is easy to make and a traditional way to commemorate ANZAC Day or to enjoy on any other day. The first ANZAC biscuits were made by women on the home front and sent overseas to the New Zealand and Australian soldiers fighting in World War 1.
This ANZAC biscuits recipe is easy to make and a traditional way to commemorate ANZAC Day or to enjoy on any other day.

The first ANZAC biscuits were made by women on the home front and sent overseas to the New Zealand and Australian soldiers fighting in World War 1.

They were originally called ‘Soliders Biscuits’ and contained just flour, sugar, milk powder and water to help them last the long journey at sea before reaching the troops.

Now the biscuits are more of a treat with the addition of butter, golden syrup and desiccated coconut.

ANZAC Day is commemorated on 25 April and is an annual national holiday observed in both New Zealand and Australia.

Have a go at making your own ANZAC biscuits:
 

Ingredients:

  • 2 cups (180g) rolled oats
  • 1 cup (150g) plain (all-purpose) flour
  • 2/3 cup (150g) caster (superfine) sugar
  • 3/4 cup (60g) desiccated coconut
  • 1/3 cup (115g) golden syrup
  • 125g unsalted butter
  • 1 teaspoon bicarbonate of (baking) soda
  • 2 tablespoons hot water
 

To make the ANZAC Biscuits

1. Preheat oven to 160°C (325ºF).

2. Mix the oats, flour, sugar and coconut in a bowl.

3. Place the golden syrup and butter in a saucepan over low heat and melt, stirring until melted.

4. Mix the bicarbonate of soda with the water and add to the butter mixture.

5. Add to the oats mixture and stir well.

6. Place tablespoons of the mixture onto baking trays lined with non-stick baking paper and flatten to about 7cm in diameter, allowing room for them to spread.

7. Bake for 8–10 minutes or until a deep golden brown.

8. Cool on the baking trays for 5 minutes, then transfer to wire racks to cool completely.

9. Makes approx. 35 biscuits.
